While so many of us are at home as we wait for COVID-19 to pass, the majority of questions I’m getting on Instagram have been about tips for eating healthy while at home. I certainly do not consider myself an expert here, given that every night I’m making popcorn or cookies, but for the most part, we do eat pretty clean, so I thought I’d share what we do…but just know that in addition to this, we are gettin’ down on some serious popcorn and cookies every night. Everything in moderation, though, right?! So try out these ideas, but don’t deprive yourself.
Embrace Meal Prep: One option would be to look at the silver lining - being home means you finally have the time to meal prep. You could spend two afternoons this week cooking your meals for the remainder of the week.
Embrace Simplicity: Meals don’t have to be complicated - we tend to keep it pretty simple around here. Meals are generally meat, veggies and a complex carb, all seasoned simply with salt and pepper, and a spice blend from my favs. We try to vary our fats - rotating between coconut oil, bacon fat (we get it from the bacon but they do sell quality pork fat, if you’re interested), ghee and olive oil.
Switch Things Up: I am a huge fan of breakfast smoothies. This change came months after having leftover dinner for breakfast, which wasn’t initially very appealing but I came to enjoy it. I essentially just switched it up because I wanted to get some more variety in my meals. Breakfast smoothies are a great way to get in added greens!
Try a One Pan Meal: One pan (or one pot) meals take the guess work out of things and are fool-proof. A go-to for us is putting some sort of ground meat onto one side of a cookie sheet, putting chopped sweet potatoes in the middle, and roasting veggies on the other side. Season and throw in the oven for 35-40 minutes and you have yourself the easiest lunch or dinner, ever.
Embrace Healthy Snacks: Some of our favorite snacks are cukes with salt and hummus. Dan will literally eat a bell pepper like an apple - it’s the wildest thing. I’m not quite on that level of bell pepper enthusiasm but I like them with hummus. I also love carrots and cheese. Dan is a fan of celery and nut butter. He also loves olives. And we are both big fans of pistachios, roasted almonds, and cashews.
