I have zero self control when it comes to restricting what I put in my mouth. For the most part I eat pretty healthy and I’m mindful about balanced nutrition but I’m also not afraid to let loose and eat what I feel like eating when I feel like eating it. Some of you might find this kind of odd but I’ve never been a big “luncher” - I always go all out for breakfast and dinner but I’m never really in the mood for a big meal in the middle of the day (unless I work out that morning, then I could eat my own fingers by 11am) Tis' the season for sharing so over the past two weeks or so I’ve been snapping a few of my meals to share with you guys... just in case you’re looking to change things up in your kitchen.
Breakfast Panini & egg scramble. I whipped up an egg scramble with 3 organic cage free eggs, bacon from a local farm, organic bell peppers, red onions and mushrooms all between freshly pressed whole wheat sprouted bread. What can’t fit inside the sandwich I eat as a side with some green chili.
Ground Bison & Quinoa with Sauerkraut. I’ve recently started incorporating bison into my weekly diet and I can’t get enough of this one. I usually fry it up with some organic onions, bell peppers and spices - then i’ll mix in some quinoa before it goes on my plate. I’ve also become addicted to this Dill & Garlic Sauerkraut Salad and it makes for the perfect side with most everything.
I’m a sucker for berries and was craving a little taste of summer so I dove into these one afternoon.
As you all know, Thanksgiving just recently passed so I jumped on the opportunity to whip with a turkey soup with homemade bone broth and chopped kale. I always squeeze in a little lime right before serving for a little mexi twist - so good! I sometimes add Vital Proteins Collagen Peptides for added collagen as well.
All you need is a teaspoon in a cup of broth, and it doesn't taste like anything but I like feeling like I get an added boost of collagen.
I like to take a few ladles of broth out before making the soup to set aside for sipping on throughout the day. A cup of hot broth in the middle of the day just hit the spot better than any cup of tea (well, in my book anyway!)
I was feeling spicy one night so I put together a little sriracha honey chicken bowl with steamed brown rice and fresh cilantro.
Okay, I die for this Merl Scramble from a local diner - words can’t even do this beauty justice. It’s a giant plate of everything I live for in life. Diced potatoes with pepper and onions covered with bacon, scrambled eggs, shredded cheddar and green chili. #mindblowing
and last but not least I put my sister's Vitamix to good use making this butternut squash soup topped with just a bit of balsamic vinegar. I decided to throw in a little bit of this curry powder to the squash before throwing it in the blender - best choice I made that day!
