A few months ago I posted about making your own almond butter. That shiz is beyond expensive, so I was really excited when I realized we could make our own with our vitamix. HOWEVER. It came out a bit dry. I didn't mind at the time, because it was saving us money and it tasted fine.... but I have since discovered the secret to creamy almond butter. Are you ready?

Vibrant Eastern Carrot and Pear Smoothie

The little health food store I frequent has some seriously gorgeous produce right now. Bright yellow lemons and vibrant fresh greens are the norm, but the other day I spotted these carrots that were mostly purple with a bit of orange. I mean maybe I don't get out much or something, but I'd never seen carrots like this, so I picked some up and figured I'd juice them.

This is a really easy to make salad that's sure to satisfy even the most picky eater. The cucumber and hemp seeds provide an unexpected yet welcomed change to the already perfect caprese, and the arugula amps up the vitamin and minerals factor so you can feel really good about what you're putting in your body. Perfect in the summer, this makes a great light lunch.

Coconut Curry

I can't believe I've gone my whole life and never had curry. I saw the recipe onDetoxinista (love her!) and it looked so appetizing and easy to make, so I figured I should give it a try. It was such a hit that I made it two nights in a row! It takes about 20 minutes to make. The second night I made it I added a couple different spices and snapped the pics above.
