Packed with vitamins A and K, a ton of fiber, and anti-inflammatory properties, broccoli is a powerhouse in the veggie world. Arugula also has vitamin K, lots of fiber and anti-inflammatory properties, but it also is high in B vitamins making it beneficial for hair, nails and skin. This recipe comes from It's All Good, but I altered it a bit, as the first time I made this soup it came out too watery. You can make it in 10 minutes, which is an obvious plus. The only downside is that one, even two bowls, of this soup doesn't really fill me up, so I feel it's best served as an appetizer or as a light lunch along side some hummus and pita bread. But that's just me. :)
Ingredients for Detox Broccoli Arugula Soup
1/2 lemon
salt and pepper to taste
large handful of arugula
small head of broccoli
1 small yellow onion
1 clove garlic
2 cups water
1T olive oil
parmasen cheese for garnish (optional)
Directions for Detox Broccoli and Arugula Soup
Steam or boil broccoli just until it is tender (about 6 minutes). In another pan, put olive oil, chopped yellow onion and diced garlic in a hot pan and sautee until onion is clear, then add water and cook for 5 minutes. Transfer broccoli and water/oil/onion/garlic to a high powered blender and blend until it has a smooth, whipped consistency. Serve immediately topped with cheese (optional). Eat and enjoy!
