Organic raw almond butter is freaking expensive. Like around $20 bucks for a jar expensive. So when my mother-in-law told me how she started making her own peanut butter with her vitamix I thought we should give it a try with almond butter. I bought one pound of organic raw almonds for $12.99 and it yielded a large mason jar full of almond butter. Pretty good, right?
UPDATE: I HAVE DISCOVERED THE SECRET TO CREAMY ALMOND BUTTER.
Ingredients
1 pound organic raw almonds (UPDATE: USE ROASTED ALMONDS!)
3T organic olive oil
(you could also add salt and/or honey, but I wanted to keep it simple)
Directions
Put the almonds and oil in a vitamix. Put it on high for about three or four minutes. It'll start to turn into a paste and then into a peanut butter texture as you continue to run the vitamix and work the accelerator tool around the blender. When you've got the desired consistency, turn the vitamix off, and put the almond butter in a jar. Keep refrigerated. Eat and enjoy!
