Homemade Mint Ice Cream

You're skeptical that avocado ice cream could be awesome? I get it. Avocados are for guacamole and salads. But ever since I made avocado chocolate pudding I've been a fan of experimenting with them in desserts and this mint ice cream is another surprising win. I used this recipe, but made a couple changes. The end result was a creamy, delicious mint chip ice cream and you'd honestly never know it was made with avocado because there isn't a hint of it in its taste. Hope you enjoy!

Pineapple Ginger Detox Smoothie

In addition to the post workout breakfast smoothie, this detox smoothie is on heavy rotation at my house. The base is pineapple, which is so beneficial to the body. Pineapple contains manganese which is good for our bones. It also contains bromelain which aids digestion and has anti-inflammatory properties.

Post Workout Shake

I got up early today to film and edit a yoga video for anxiety, but it's taking a really long time to upload, so in the meantime I thought I'd post about this post workout shake I love. This tastes really good, and is a clean alternative to the sugar-heavy shake mixes out there.

Ingredients

1/2 banana

3 ice cubes

1 cup unsweetened milk of choice (I used almond milk)

1 scoop quality whey protein powder (buy something with low carbs and low sugars)

1 scoop greens powder (I love this brand)

1 date, pitted

1 teaspoon vanilla extract

Directions

Throw everything into a blender and blend on high until you get a smoothie consistency. Drink and thrive.

Homemade Almond Butter

Organic raw almond butter is freaking expensive. Like around $20 bucks for a jar expensive. So when my mother-in-law told me how she started making her own peanut butter with her vitamix I thought we should give it a try with almond butter. I bought one pound of organic raw almonds for $12.99 and it yielded a large mason jar full of almond butter. Pretty good, right?

Easy Bean and Kale Soup

Every once in a while I wake up with a very specific idea of what I want to eat that day and I am psyched when I throw it all together and it comes out just as I had imagined. This soup was one such example. It's still pretty chilly up north so I wanted a soup to warm me up, but I didn't want it as hearty as my go-to lentil soup. I threw the following ingredients together and it was a success. C'mon, warm weather!

Before all this started, however, I was still enjoying the Lara bars I had made and decided I'd experiment with other ingredients. I kept these in the freezer and they tasted like cookie dough, so clearly it was a win. Just as easy to make and assemble as the Lara bar, and equally delicious as a mid-afternoon pick-me-up.
