We're so excited to bring you this pumpkin hemp cookie recipe using Manitoba Harvest's Hemp Hearts, which offer a nutty, rich, earthy flavor that's complemented by the pumpkin in the cookie. Hemp Hearts are packed with protein and omegas, and they're a great addition to any dessert to make it just a little healthier. :)
These cookies are the perfect dessert for fall, and pair well with your favorite tea or even a glass of cold milk. All the ingredients and full instructions are below, along with a little video of our process. Give them and try and let us know how they come out!
Ingredients for Pumpkin Hemp Cookies
- 1 cup pumpkin, cooked and mashed
- 1 cup Manitoba Harvest hemp hearts
- 2/3 cup hazelnut flour
- 1/3 cup coconut flour
- 2 eggs
- 1/4 cup honey
- 2/3 cup coconut oil
- 1t baking soda
- sea salt to taste
- Manitoba Harvest hemp hearts for the top
Directions:
Preheat the oven to 350. Put the eggs, pumpkin and coconut oil into a mixing bowl and mix. Slowly add the honey and continue to stir. In a separate mixing bowl, put all the dry ingredients together and stir. Then, stir all the ingredients together until blended. Use a teaspoon to shape the cookie batter into about the size of a meatball and place on a greased baking tray. Then, generously sprinkle Manitoba Harvest hemp hearts over the top.
Place the baking tray in the oven and bake for 8-12 minutes, or until golden brown. Transfer the cookies to a drying rack, and eat and enjoy.
