I had been craving something sweet for ages, and I had some bananas on their last leg, so I figured I'd kill two birds with one stone and whip up something since I finally learned how to use the oven at our new place (it's the little things, people!). Sometimes mistakes are blessings in disguise, because I had hoped for a cookie but they wound up being a bread-like consistency, which is awesome because who doesn't like banana bread?! Anyway, these little banana bread bites made for a great snack and hit the spot, so I thought I'd share the recipe here.
Ingredients for Banana Bread Bites
The following ingredients makes about 15 small banana bread bites.
2 bananas, very ripe
5 heaping tablespoons of peanut butter (I made my own, which is the same process as making homemade almond butter)
Himalayan salt to taste
Optional: chocolate pieces (I just cut up a row of a dark chocolate bar)
Butter for greasing the pan
Directions for Banana Bread Bites
Preheat the oven to 350f. Mash the bananas with a fork, and add peanut butter and salt. Mash some more, and add the coconut flour. Mix the flour in until it's a thick consistency. Add chocolate pieces. Grease the cookie sheet and use a spoon to put the dough on the sheet. The dough won't flatten like a cookie, so shape them how you want them. Bake for 7-10 minutes or until golden brown.
