One of my resolutions this year is to have at least one day per week where I don’t work at all. Given that I’m writing this on a Sunday night, I guess I didn’t really accomplish that but I truly didn’t really work today besides writing this post and answering DMs and a couple emails. It’s definitely a start for sure, and for that, I’m proud.
Another goal of mine this year is to try to meal prep a bit more because I just need to be better about having food readily available so I don’t get irritable. Here are a few things I made today:
I did a pasta dish with bowtie pasta, bacon and broccoli. Simple, quick, and easy.
Having roasted veggies on hand is so key for me. Even if you don’t prepare a full meal, one of the things I’ve learned is that if even one piece of the meal is prepared, it saves you a ton of time. Roasted veggies are such a staple in my diet. Here I’ve got carrots, brussels sprouts and sweet potato.
And here is my fridge after about two hours of cooking. On that center shelf you can see the rotisserie chicken meat I de-boned, and to the right of that I made a beef dish with roasted veggies, some leftover beef stew, and quinoa. These meals should get us through til Wednesday, when I’ll prep again.
As annoying as it is to cook for two hours straight, it is so worth it to not have to stress in the middle of the work day, and I find that I’m so much more productive this way. Cheers to a great week ahead!
