After the delicious marshmallows I made a couple weeks ago, I wasn't really sure how else to use the gelatin powder I had purchased. I bought a two pound jar, so I had a ton to use! I had heard about putting a scoop in protein drinks and smoothies, but I couldn't think of a recipe I could use it in. One morning, Greg said, "Why don't you just make jello?" And so I did.
I used my grandmother's recipe and it came out perfect. Well, not Masterchef perfect (apparently it is supposed to be clear), but perfect enough for me. It's simple to make and I love that it doesn't have any added sweetener (sugar tends to make my joint pain flare up) so it's definitely going to be a staple dessert in our house.
Ingredients for Homemade Strawberry Jello
1.5 cups fresh strawberry juice (I used this juicer)
1 cup water
2 tablespoons grass-fed gelatin or collagen powder
honey (optional, if you like it on the sweeter side)
Directions for Homemade Strawberry Jello
Place half a cup of water in a bowl with 2 tablespoons of gelatin or collagen powder and set aside for ten minutes.
Place the other half cup of water in a sauce pan on high heat and bring it to just before boil. Transfer this water to the bowl with gelatin and water. Stir, so the mixture thins out a bit. Then stir in the strawberry juice. Pour the mixture into cups or little bowls and put them in the fridge to set for about 7-8 hours.
