I don't keep a lot of snacks in my apartment. Trust me, if I am near a snack, especially if it's salty or savory, my self-control is non-existent. One, I can BEAST a bag of Utz potato chips. Two, I can also eat nearly an entire block of cheese in a night, given the opportunity. While tasty, they're anything but nutrient-rich. Keeping them out of my kitchen beats temptation. When I do buy snacks, I scrutinize my labels harshly before purchasing. (Yeah. I've become THAT person. Ha!) I also try to follow the advice of many healthy-living bloggers: I keep fruits and vegetables easily accessible in the fridge or my counter for snacking. Whether it's some bananas in my fruit bowl or some sliced red bell peppers in my crisper, I can feel less guilty popping a few veggie bites if I'm wicked hungry and dinner isn't ready yet.
That being said, simply noshing on fruits and vegetables when a hunger pain hits can become...boring. I like switching it up. I've been crafting grab 'n' go healthy snacks to keep in my fridge that are flavorful, nutrient-dense, and easy to handle if I want to take them out the door with me.
Peanut Butter Banana Oatmeal Bites have been my snack du jour, snack de la semaine, even my snack de mois! In plain English, these bites have been becoming my go-to. You've got grains, fruit, and protein all contained in one sweet bite. I also stir a scoopful of Vital Proteins Collagen Peptides (unflavored!) into my mix for an extra nutritional boost. It blends in seamlessly! If I can make a snack that can possibly help reduce inflammation, improve my joint health, and make skin look like I've been dipping into the Fountain of Youth, I'm all about it! Ha!

Peanut Butter Banana Oatmeal Bites
(Makes roughly 12 - 14 bites)
Ingredients:
- 1/4 cup peanut butter
- 1 ripe banana, mashed
- 1 cup old fashioned oats
- 1 tablespoon honey (or other sweetener of choice)
- 1 scoopful Vital Proteins Collagen Peptides (unflavored)
Before We Get Started...
- Your hands WILL get sticky when you roll these bites! Consider this fair warning. Ha! But what's cooking without getting your hands a little dirty?
- If you find your bite mixture to be too sticky after mixing, add an additional 1 - 2 tablespoons of oats.
Directions:
1.) In a small bowl, mash banana until it is as smooth as possible; attempt to leave no chunks.
2.) Combine all ingredients in a large bowl and mix until combined. Place dough in fridge for at least 30 minutes, preferably 60 minutes.
3.) Remove mixture from fridge; take mixture, which should be a little tacky but not overly sticky, and roll mixture into approximately 1" ball-shaped bites.
4.) Store bites in fridge in an airtight container; will remain good for up to seven days, though it is better to consume them within three days of making them, as the banana within the mixture can cause the bites to "brown".
