Looking for an easy and healthy desert recipe for the holidays?? Or just looking for a healthy snack to have on hand? Try making these Butter Bark Bites! They are incredibly simple and the variations are endless! Here, I’ve made a Monkey Bark, Macadamia Bark, and Blueberry Almond Bark. My favorite is the Monkey Bark because it tastes like a Reese’s!!
What I love about these is that they’re satisfying and nutrient dense! The melted butter makes them pretty rich (almost like fudge...a little goes a long way) so they’re very pleasing to the sweet tooth. These are also wonderful snacks for maintaining energy levels. In my post about stress, we all know stress causes irregular swings in blood sugar levels. Providing the body with healthy fats is a great way to stabilize blood sugar while at the same time supplies the body with its preferred source of fuel.
To make, simply melt 1/2 C Butter and 1/3 C coconut oil and pour in a loaf pan lined with parchment paper. From here, simply add your toppings!
For the Monkey Bark, add:
1/3 C Softened Almond Butter (add almond butter to the melted butter and combine well before pouring into loaf)
Crunched Plantain Chips
Drizzle of Honey
For the Macadamia Bark, add:
Crunched Macadamia Nuts
Toasted Coconut flakes
Drizzle of Honey
For the Blueberry-Almond Bark, add:
Coconut Flakes
A couple drops of Almond Extract
Drizzle of Honey
Once you have added the toppings, place in the Bark in the freezer until hardened and well formed. Take out and gently break apart pieces or slice with a knife.
