On last Friday's birthday post, I mentioned my new favorite quick meal: tofu scramble. It's so much better than it sounds, I promise, and the fact that it takes less than 10 minutes to cook adds to its appeal. Here's what you'll need:
Ingredients
1 pack organic gmo-free firm tofu
1 red pepper, chopped
1 sweet onion, chopped
a handful of spinach, rinsed
turmeric
cumin
nutritional yeast
salt & pepper
1 tsp extra virgin olive oil
Directions
First, put the chopped onion in a hot pan with olive oil. While it sautees, remove the tofu from the package and wrap it in a paper towel. Press firmly on top of it to squeeze out the excess water. Unwrap, flip it over, and repeat. Get as much water out as you can. Then, crumble it the pan. Add the veggies except for the spinach and stir. Sprinkle in a bit each spice (amount is totally up to you). When it seems like everything is almost cooked, add the spinach last (spinach takes so little time to cook- when the leaves just begin to wilt, it's ready). Serve and enjoy.
