A perfect dessert, these dark chocolate no bake cookies were a hit at my house. I was surprised, actually, because I am more of a chocolate chip cookie person, preferring a soft, bready texture, but these were really very good. Here's what you'll need:
1/2 cup honey
1/4 cup 100% organic cocoa powder
1/2 cup 100% organic coconut oil
1 teaspoon vanilla
1/4 teaspoon fine sea salt
2 cups coconut flakes, or nuts of your choice (I used chopped walnuts)
Combine the honey, cocoa powder, sea salt and coconut oil over medium heat. Bring mixture to a boil, and boil for one minute, stirring. Remove from heat, add vanilla, and stir. Add in the nuts/coconut flakes and mix well. Use a spoon to drop the mixture onto a baking sheet lined with parchment paper, and transfer cooking to the fridge or freezer to set. When the cookies are cold, they should be easy to remove. Serve immediately. They tend to soften in room temperature, so serve chilled.
