One of the benefit of spending time away from the US is experiencing food I don't normally see at home. In Dubai, I saw strange looking squashes. In Thailand, I saw all sorts of sea animals I'd never seen elsewhere. And the other day in Germany, I picked up eastern carrots.
I'm not sure I've seen them at a grocery store in the states, but I definitely haven't ever purchased any if I have. They are this vibrant purple color (which comes from an antioxidant), and they are sweeter and a bit more flavorful than regular carrots. For juicing, this means that they even out the bitter taste of kale, and transform the juice into a beautiful purple color.
Ingredients for Eastern Carrot Kale Juice
1 lemon (peeled)
3 eastern carrots
1 apple (core removed)
6 large kale leaves
1/2 inch piece of ginger
