The little health food store I frequent has some seriously gorgeous produce right now. Bright yellow lemons and vibrant fresh greens are the norm, but the other day I spotted these carrots that were mostly purple with a bit of orange. I mean maybe I don't get out much or something, but I'd never seen carrots like this, so I picked some up and figured I'd juice them.
After a quick google search, I found that these carrots, called Eastern or Asiatic carrots, come from Afghanistan, Iran, Russia and Asia. They get their deep pigment from anthocyanin, an antioxidant that improve eyesight, is anti-inflammatory, and can provide allergy relief.
I put 'em in the blender with some fruit and the end result was a gorgeous looking, refreshing, super healthy smoothie. Hope you enjoy!
Ingredients for Virant Eastern Carrot Smoothie
5 eastern carrots
1 pear
1 lemon
1/2 cucumber
1t greens powder
1/2 in piece of fresh ginger root
5 ice cubes
Directions for Vibrant Eastern Carrot Smoothie
Blend all ingredients together in a high powered blender until completely smooth. Serve immediately.
