Homemade Fish Soup

In case you're wondering, it isn't easy to make a fish soup look appetizing in photographs. However, this soup tastes so good that I'm going against my better judgment and sharing the pictures with you anyway.

Truth be told, I've always been too intimidated to do anything with fish besides bake it. Unless it's salmon, I never know when it's fully cooked, and after too many failed attempts with cod, I decided it's just easier to stick with chicken or some other meat.

Coconut Energy Bites

My local health food store always has coconut for sale and for weeks I've been tempted to buy one but I didn't know how I'd get it open. I had read a machete was required, and well, I am fresh out of machetes. However, a few weeks ago I remembered a small hammer we picked up last year. I figured we could use that. By "we" I mean my husband, because I tried to hammer that thing apart, but it just wasn't happening. Anyway. Cooking with fresh coconut is like making your own fresh soup broth or tomato sauce. Once you try the final product, no substitute will taste as good as the homemade version.

I started the GAPS diet a month ago and while I do find it to be labor intensive, I am enjoying coming up with interesting meals. Years ago, when I studied in Spain, I fell in love with tapas - small savory plates usually served with a cocktail. This is my take on the beloved finger food and like most things I make, it's pretty versatile. Because the tortilla is grain-free, the consistency comes out like a crepe. It doesn't taste like cauliflower, so from eggs to tofu to chicken, the options are endless. Hope you enjoy.

Pancakes have been my go-to afternoon snack lately. I've experimented with quite a few GAPS ingredients, and this combo has yielded the best pancakes so far. They are fluffy, flavorful and completely satisfying. The only trick to them is that you have to make them small - just smaller than the palm of your hand. They flip easier that way. Hope you enjoy!
