Our girl Lauren, YBC's Marketing and Events Director, is back with a guest post. Today she's tackling a healthy dessert recipe of panna cotta with berries.

Anyone who knows me knows that baking is NOT my jam – I don’t even like eating most baked goods (I know what you're thinking, is that even a real life statement?!) but baking has always been one of those things that intimidates me. Probably because I have zero clue what I’m actually doing or how things are ‘supposed’ to taste once all is said and done. It’s pretty embarrassing because my Mom is a master baker – she absolutely kills it in the baked goods department of life (clearly I missed out on the baking gene, thanks mom!) While I can turn down most baked goods that come my way without a second thought, there are a few that I can NEVER pass up. I could easily enjoy a solid week filled with nothing but cheesecake and tiramisu for breakfast, lunch and dinner so I’m not totally off my rocker.
But in all seriousness, my kind of baking is baking that requires NO actual baking, which is why I decided to whip up some panna cotta when Vital Proteins Pasture Raised Beef Gelatin arrived on our HQ's doorstep. As you guys already know, I’m zero percent baking fanatic but I surprised myself and found that Panna Cotta is actually a lot easier to make than I originally thought and Candace’s husband, Greg, even gave it a thumbs up…which I promise you, never happens when I bake (unless he was just being a gentleman and in that case, proceed with caution!!) haha kidding…maybe ;-)
Ingredients for panna cotta recipe
1 14-oz. can full-fat coconut milk, refrigerated
1 t honey (we just had raw honey, so we used that)
2 t. vanilla extract
2 t. Vital Proteins Collagen Proteins
Berries for garnish
Pour the coconut milk in a medium saucepan along with the honey, and vanilla extract. Whisk everything together over medium heat. Heat the mixture until it's warm to touch. Slowly begin to pour in in the collagen proteins as you continue to whisk. Whisk until the proteins are completely dissolved. Turn the heat off and pour the mixture into three small dishes. Place in the fridge for 2 hours, or until the mixture gels and is firm.
