With social distancing still going strong as we work to flatten the curve, I feel like we are going to the grocery store less and less, and doing bigger shops. Normally, I like going every day because I find that I buy only what I need, but since we are trying to distance ourselves, we aren’t going that often and my fridge is stocked all the time. I thought I’d share what it looks like, in case you are looking for some food inspo.
I accidentally posted this on Instagram and a few people asked why I keep protein and nuun tabs in the fridge, and the answer is because my boyfriend is a little OCD about things going bad. I’m also a weirdo and prefer everything to be frozen or in the fridge. (I keep all my flour and nuts in the freezer - they actually do go rancid with heat, just fyi).
We try to eat at healthy as we can, but quarantine has us buying and eating things we wouldn’t normally eat. Like in two weeks, I’ve made four batches of cookies after discovering this excellent flour. We’ve also been a huge fan of these chips, which wouldn’t normally be a problem, but we can’t seem to make a bag last longer than a day.
A typical day in food for me is:
Breakfast: Smoothie (I like Rootz Collagen Protein or Bulletproof - and you can use code YBC20 at Rootz!) and I always have coffee with Vital Proteins Collagen Creamer.
Lunch: some sort of veggies like brussels sprouts, about 4oz of meat seasoned with my favorite seasoning and some sort of fat (like half an avocado) or carb like fingerling potatoes.
Dinner: similar variation of lunch with different meat, veggies and carbs or lately I’ve been doing half a sandwich (turkey, cheese, mustard, leafy greens and sprouts on ezekiel bread, and a big bowl of homemade soup with bone broth). Last night I had tacos (which these incredible grain-free taco shells).
Snacks: I usually have two snacks - one between breakfast and lunch, and one after dinner and ugh, lately, I’ll eat like an entire bag of chips haha, or a few homemade cookies. I’m also into SuperFat Keto Cookies (they’re UNbelievably good!!!), carrots and cheese, cukes/pepper/radish and garlic hummus, a handful of pistachios, or roasted and salted almonds.
The bane of my existence is trying to drink enough water. Most days I do okay, but it is a real, real effort and does not come naturally to me. A good day for me is 64oz of water, but like I said, it takes serious effort.
