We've got our resident Food Writer, Allison, here today to share this delicious recipe she's put together in partnership with AllWhites® 100% Egg Whites.
Eggs. When I think about them, I think fried. I think hard-boiled. I think omelettes. I think frittatas. I think luscious Eggs Benedict at brunch on a Sunday morning. I don't think, "Hey! Let's add these to my bowl of oats!"
I've seen many health-minded food bloggers mix egg whites into their oats over the past few years. My curiosity certainly got the best of me! I wanted to try this method one Saturday morning; after spending an hour at the gym, I knew a bowl of plain ol' oats would not fill me up the way something more protein-laden would. My body craving that extra boost!
AllWhites® 100% Egg Whites made my oatmeal into something incredible. Not only are there 5 grams of lean protein per serving, no additives, and no fat or cholesterol, I am totally amenable to not having to crack open multiple eggs and separating the whites from the yolks. When using them, I popped open the top of the container, poured out as much as I needed, and voilà! As a recipe developer as well as someone that prefers throwing together quick meals such as this, I value this pour 'n' cook convenience!
Add whatever mix-ins you may choose, but as we head into the hot steamy middle of summer, nectarines are just ripe for the picking. The creamy fluffy texture of these oats mixed with sweet juicy bursts of fruit will leave you enamored with this recipe, no doubt!
Egg White Oatmeal with Nectarines
(Makes one serving)
Ingredients:
- 1/4 cup AllWhites® 100% Egg Whites
- 1 cup water
- 1/2 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pure vanilla extract
- 1 nectarine, rinsed and cubed small
Directions:
1.) In a small bowl, add AllWhites® 100% Egg Whites and whisk with a small whisk or fork until frothy. Set aside.
2.) In a medium-sized saucepan, add water and bring to a slow boil. Add oats and cinnamon; reduce heat to low and cook until most of the water has absorbed, approximately five minutes. Stir occasionally to keep oats from sticking to the bottom of the pan.
3.) Add frothed egg whites to oatmeal by folding them in; do not overmix! Add vanilla extract and fold in nectarine. Cook oatmeal for 3 to 4 more minutes or until egg whites have incorporated and the oatmeal takes on a fluffier appearance. Remove from heat, cover with lid, and let sit for an additional three minutes.
4.) Place oatmeal in a bowl and chow down on this delicious meal!
