If you thought the coupling of peanut butter and chocolate couldn’t be beat, think again! Just in time for the cool crisp arrival of fall - we have for you an incredibly delicious marriage of chocolate and coconut that’s sure to satisfy all your sweet cravings! Impress your family, friends and kids with this Coconut Hot Chocolate recipe.
What you’ll need:
- 2 tablespoons unsweetened cocoa powder
15-ounces of coconut milk
¼ cup dark brown sugar or maple syrup (feel free to use coconut sugar as well - I didn’t have any on hand)
¼ cup bittersweet chocolate (chopped)
1 teaspoon vanilla extract
1 pinch sea salt (optional)
Boil ⅓ cup water in a sauce pan. Once boiling, whisk in unsweetened cocoa powder.
In a separate saucepan, combine the coconut milk, sugar and a pinch of salt until the sugar is fully dissolved.
Once dissolved, whisk in the cocoa powder mixture until smooth then add the vanilla - stir and enjoy! This is recipe makes a thicker hot cocoa - you might want to add a little bit of water to thin it out - depending on what your preference is! Because it's a bit thicker, you're going to want to pour and enjoy right away (leaving me virtually no time to snap a final picture of the mixture - oops!) If you’re feeling really crazy, top with whipped cream.
