If you’ve hung out on my blog for a while, you’ll know that breakfast is easily my favorite meal of the day. I mean, hands down. Forget lunch, forget dinner. Breakfast is where it’s at. If I don’t eat breakfast in the morning, I feel like death warmed over. It’s vital.
Both my husband and I are big breakfast people, and while we both like different sides (he prefers overnight oats while I enjoy homemade yogurt with fresh berries), we both love eggs as the main meal. We always buy organic eggs, so when the opportunity came up to blog about Pete & Gerry’s Organic Eggs, I jumped at the chance as PGO is a brand I know, love and regularly buy. What I like about them is that their eggs come from a collection of family owned farms, not factory farms. This is important to me because I believe the quality of the egg is directly impacted by the quality of the life of the chicken.
Anyway, breakfast. At my house, we generally do scrambled eggs, just because they’re quick and, if I’m being honest, pretty hard to screw up. But every once in a while we’ll go the extra mile and make an omelette.
PGO Omelette with Asparagus, bacon and cheese
Ingredients:
3 PGO eggs
5 asparagus spears, sautteed and chopped
2 pieces cooked bacon, chopped
cheddar cheese to taste
butter for cooking
Directions:
Crack the eggs in a bowl and whisk. The more air you get in the eggs with the whisk, the fluffier the omelette will be.
Put butter into a skillet over med-high heat and melt.
Pour the eggs into the skillet. The eggs should set immediately. Tilt the skillet until the egg is distributed over the entire skillet. Turn the heat down to med and continue to cook. When there is no more raw egg on top, add the asparagus, bacon and cheese to one half of it, and fold the other half of the omelette over top. Let the cheese melt and then serve immediately.
