It’s 2021, and as always, the New Year has brought me a renewed sense of motivation and inspiration to jumpstart my, well, life. There’s always a certain level of embarrassment I have, I guess, when I share the changes I’m making because I know so many people are not into goal-setting for the New Year, but I truly am.
The last few months of 2020 have been rough for me. I am someone that thrives on routine and goal-setting. I feel like my days are better spent when I’ve got goals in mind because I view each day as an exciting opportunity to work towards those goals.
One of the things that’s really gone the wayside for me has been my nutrition and workouts. WIth the nutrition, Dan and I just haven’t been planning well. We both have very crammed Mondays and Fridays, and yet every week we’d scramble as to what to do for dinner because we, once again, hadn’t prepared well. I’m so done with that, because I inevitably will be irritable because I’m hungry and then end up with a meal I don’t really enjoy or that is not serving me well. This year I decided enough was enough. My goal is to simply be more prepared with food on work days.
On Sunday, I went to the grocery store and came back with all of this: Cauliflower pizza crust, riced cauliflower, broccoli, peppers, eggs, ground beef, ground turkey and cacao nibs (I like them in my smoothies).
I also got avocado, carrots, brussels sprouts, spinach and spring mix. I like using spinach in my morning scramble or in protein shakes, and the spring mix for salads. With all these ingredients, I set out to do a bit of meal prep for the first few days of the week.
I was able to make a handful of lunches by roasting the veggies, and I made meatballs with the ground beef, and just stir fried the ground turkey.I chopped the lettuce and the pepper so I could easily assemble a salad for dinner and top it with some of the meat I’d made. We had the cauliflower pizza for dinner on Sunday night, and I was feeling really good going into the week. I’m not sure I’ll meal prep and plate meals every week this year, but I definitely just want to go into the days more prepared than last year. Even if that means prepping the food for easier cooking or quick assembly.
Being better prepared for the days feels like an appropriate goal for me, and I’m looking forward to seeing how I benefit from it.
On the fitness front, I’m very excited to be getting back in a regular workout routine. I’m launching Intention Factor™ Fitness Program on January 8th and could not be more excited to be doing it with people who are also looking to find a more regular workout routine. The program is intentionally designed for people who have lifted before and who are ready to jump back on the horse. I cannot wait, you guys.
In addition, I’m going to commit to attending at least one dance class per week, as it truly brings me so much joy, and I love the cardio demand of it. Over the last year, I really stuck with dance and feel I’ve improved, although I’ve identified a number of areas of improvement including footwork. I’m looking forward to focusing on my footwork in 2021.
