A while back, Marketing Director Lauren and I were traveling together for a workshop tour, and she was checking in back home with her toddler son and husband. She got off the phone and was talking about what her husband had put together for her son for dinner, and mentioned that they have a family rule that they try to get at least three colors in each meal. Colorful foods like deep purple heirloom carrots, bright leafy greens, and vibrant orange butternut squash all signify variety and anti-oxidant qualities, and I loved the tip so much I started incorporating it into my own meals (this one fits the bill). Suddenly, I had the welcomed challenge of seeing how colorful I could make my plate. I realized not only was I then eating a healthier, more varied diet, but the meal itself looked that much more appeasing.
