If you follow me on twitter, then yes, this is the ice cream that is to blame for my chipped tooth. My advice, if you care about your teeth, is to not allow your ice cream to get freezer burn, and if it does, do not eat said ice cream. :)
Anyway! This is one of the desserts I'd love to just have constantly in the crockpot. It makes the whole house smell like Christmas, and because the apples are thoroughly cooked and there isn't floury dough, it's easy on the digestive system. Yeah!
Almost Apple Pie Ingredients
6 apples, sliced and peeled
2T honey
2t cinnamon
1t nutmeg
1t all-spice
Directions for Almost Apple Pie
Put the apples in a large mixing bowl and add in the honey and ghee and mix. Add spices and mix thoroughly, so the apples are coated evenly. Then, transfer mixture to a crock pot and cook on highest setting for 2 hours, or until you can pierce the apples easily with a fork. You can eat it like that, or to make it more like apple pie, you can use the liquid in the crock pot to make a reduction. Pour all the liquid into a saucepan and put on low heat for 15 - 20 minutes, making sure to stir until it becomes sort of thick like honey. Then, transfer back into the crockpot and mix in with the apples. Serve hot with a scoop of ice cream.
Ingredients for Homemade Ginger Ice Cream
300 ml homemade sour cream (made the same way as homemade yogurt, but use cream. Recipe for free when you sign up for the YBC weekly newsletter.)
1T honey
2 eggs
1 inch piece of ginger, peeled and shredded
1T ground ginger
Directions for Homemade Ginger Ice Cream
Separate the eggs. Whip the sour cream, honey and ground ginger and set aside. Whip the egg whites until they are stiff and set aside. Whip the yolks until they are pale yellow and thick. Mix the whipped cream with the yolks and add in the shredded ginger. Then, gently fold in the egg whites. Put in a container and freeze.
