If you follow me on pinterest, you might've seen that I pinned a paleo breakfast recipe called No Oat Oatmeal. I'm following a grain-free diet right now as I try to heal my stomach from long-term antibiotic use. For me, the grain-free diet is brutal. I've never been a big bread or rice person, but I love granola. Or a hot bowl of oatmeal on a cold morning? The best.
The longer I follow a grain-free diet, the more I realize that if I just get creative (or, um, get help from pinterest), I might be able to have my oatmeal and eat it too. So I used what I had, and omitted what I didn't want in the original recipe and came up with a modified version that worked for me. The end result?
Well, I know it looks like a mix between canned tuna and cat food, but it was deceivingly delicious! It had an oatmeal consistency, and the cinnamon, almond butter and toasted nuts gave it such a great flavor that even someone not following a grain-free diet would enjoy this!
Ingredients for Oatmeal Without Oatmeal
(a close version of paleoplan's No Oat Oatmeal)
3 eggs
1t coconut oil
handful raw almonds, chopped
handful of raw walnuts, chopped
handful sunflower seeds
2T hemp seeds
1 banana, mashed
1 almond butter
1/4c milk of choice (I used unsweetened almond milk)
1t cinnamon
Directions for Oatmeal Without Oatmeal
Whisk eggs and milk and set aside. Put nuts in a saucepan over high heat. As they toast, mash the banana and almond butter together until they become a smooth pudding-like consistency. Stir in the coconut oil. Add the eggs and milk mixture along with the almond butter and banana and begin to stir. Turn the heat down to medium, add in the cinnamon, hemp seeds and sunflower seeds. The mixture should thicken up as the eggs cook. Don't stop stirring - it cooks really fast! Cook until desired consistency (I did about 5 minutes).
