We bit the bullet and bought our own vitamix. My mom had generously given us hers for the summer, but Whole Foods had a vitamix rep who offered a deal we couldn't refuse and now we don't have to inconvenience my mom for hers. The temps have been in the 80s all week so I made this soup inspired by a sweet potato recipe in this book and served it cold. I'm not usually a big fan of cold soups, but this worked well. It's a blended soup, so it had this whipped consistency which I loved. It took five minutes to make, so if you're looking for an easy meal this is the one to try.
Ingredients
2 sweet potatoes, peeled and chopped
2 cups water
2 celery stalks
1/2c almond butter
1t turmeric
1/2t cinnamon
1 clove garlic
3T Bragg liquid aminos
1 avocado
scallions for garnish
Directions
In a high powered blender, blend water and potatoes for 1 minute. Add all other ingredients except avocado and scallions and blend for 45 seconds. Add avocado and blend until creamy. Garnish with scallions. Eat and enjoy.
