I love Lara Bars and have always been drawn to them at the grocery store back home because their ingredient list is unbelievably short (and healthy). And also because I have an inspirational badass cousin named Lara. (No, seriously, she's a blackhawk pilot.)
These bars were so easy to make and with the fresh ingredients it was no surprise that they tasted better than the packaged product. Here's what I did:
Ingredients
15 medjool dates, pitted
1 cup almonds
1/4 cup choc chips
sea salt to taste
Directions
Put all the ingredients in the food processor until everything is finely chopped. Transfer into a large glass bowl and begin to mix with your hands like you would a meatloaf. It doesn't seem like the consistency will stick together, but once you start manipulating it with your hands it does. If it seems a little crumbly, just add a tiny bit of water. Put it on a baking pan and press firmly with wet hands (alternatively, you could use a rolling pin) until it's even. Put in the freezer for 15 minutes and then cut with a sharp knife. Eat and enjoy!
