In winter months I have a hard time eating salads because I prefer warm food. I realize that unless I'm eating a ton of lettuce wraps, I'm still not getting a lot of raw lettuce but it's a start, so I'll take it. These are pretty straightforward to make. The only change I would make next time is to use large romaine lettuce but the grocery store only had minis this time around. Otherwise, they are quick and simple and make for a satisfying lunch.
Ingredients
1 lime
head of romaine lettuce leaves, washed
1/2 cup rice
1/2 cup organic black beans
1 bell pepper, chopped
1 small sweet onion, chopped
1 clove garlic, minced
1 jalapeño, diced
cayenne pepper to taste
Directions
Cook the rice and beans. I just cooked them in plain water, but you could use vegetable stock for a little extra flavor. When they're done cooking, add the jalapeño, garlic, cayenne, onion and pepper. Squeeze a little lime over top. Serve family style aside a plate of romaine leaves.
