When I'm in the mood for something really good but that doesn't require a lot of effort I always create some sort of quinoa dish. Quinoa is so good for you, so easy to make, and so customizable which is why it makes the perfect base for this healthy Mexican dish. My husband had this in a wrap with salsa and melted cheese, and I had it just as you see pictured. Here's what I did:
Ingredients
1 lime
1 cup organic red quinoa
1 red pepper, chopped
green onion, for garnish
organic corn
1 firm tomato, chopped
1 avocado
Directions
Boil the quinoa in 2 cups of water for a minute, then simmer for 20 minutes or until all the water is absorbed. Add the veggies to the bowl, squirt lime on top. Garnish with green onion. Eat and enjoy.
