Don't get me wrong- I love my juicer, but throwing away leftover pulp made me feel like I was wasting food and I wondered what to do with it. As bathing suit season is around the corner, I didn't want to make muffins or cookies with the pulp. I wanted something healthy. So I made carrot pulp veggie burgers, and while admittedly they could use a better name, they came out great. I only wished I had jalapenos on hand to make them a little more spicy. These are customizable to whatever you're juicing- use any veggie pulp- spinach, kale, whatever. Just stay away from fruit pulp because an apple/orange burger? I think not. Hope you enjoy!
Ingredients
pulp from 5 carrots
juice from a lime
1 can organic black beans, rinsed
1 onion
2 cloves garlic
1 egg
salt, pepper, cayenne pepper to taste
Directions
Preheat the oven to 350f. I was about to make a carrot, ginger, blood orange juice, so I juiced the carrots first (5 carrots), and then took the pulp out and set it aside before juicing the other ingredients.
Put the beans, onion and garlic in a food processor until it becomes a sticky consistency. Mix with the carrot, and add the egg, lime juice and spices. With your hands, make patties about four inches across and 3/4 inch thick, and place onto an oiled cookie sheet. Bake for 20 minutes, flip, and bake on the other side for 15.
Serve with salsa and avocado for a Mexican flair. Eat and enjoy!
