I love making soup because it's relatively easy and lasts for a long time. I made this soup on a Sunday, just throwing in whatever I had around, and it lasted well into the week for easy lunches. I keep telling myself spring is just around the corner, but until then this is perfect to warm you up on a cold, dark winter day.
Ingredients:
celery, chopped
carrots, peeled and chopped
1 sweet onion, diced
1 clove garlic, diced
1 head of kale, chopped
1 cup lima beans
1 cup aduki beans
1 cup black beans
2 T bouillon
2 liters water
2 T olive oil
Rinse the beans before putting them in a large bowl covered in water. Let them sit overnight. The next day, chop the veggies, onion and garlic. Put the oil in a hot pot, and add the onions and garlic. Sauté until the onions are clear, then add the water, boullion and veggies, except for the kale. Rinse the beans again, and then add to the pot. Bring to a boil and then let it simmer for two hours, or until the beans are nearly fully cooked. When they are almost ready (10 minutes out or so), add the kale. Eat, and enjoy.
