These spicy burgers came out surprisingly well. I baked them instead of frying because the consistency doesn't exactly lend itself to staying together when flipped, but if you bake it for a bit longer than you'd fry it, you can get around that hurdle. They are satisfyingly spicy and perfectly crunchy which earned them rave reviews in my house. Here's what you'll need:
1 can organic kidney beans
1/2 cup steel cut oats
1 onion, chopped
1 pepper of your choice (I used red), chopped
kale, chopped
2 tsp fresh squeezed lime juice
1 garlic clove, diced
1 tsp cayenne papper
1 tsp paprika
1 tsp cumin
1 tsp turmeric
Preheat the oven to 200c. Put everything through a food processor, or mash by hand. Shape into burgers, and place on a cookie sheet with a bit of oil so they don't stick. Bake for 20-30 minutes- until they look crisp. Then, take them out and ever-so-carefully flip and bake for another 20-30 minutes. Eat and enjoy!
