After many weeks of the same few meals in rotation, I decided to kick it up a notch. I came up with this Mexican rice and beans dish and it turned out SO good that I had to share. Here's what I did:
Ingredients:
cilantro
lime
1 can organic black beans, drained
1 cup rice (I used wild rice)
super firm tofu cut into cubes (I used an organic, non-gmo brand whose name escapes me)
1 red pepper, chopped
1 green pepper, chopped
kale, chopped
1 sweet onion, chopped
1 jar of organic salsa
1/2 avocado, chopped (optional)
Start cooking the rice (1 cup of rice in 2 cups of water). In a skillet, sautee onion and peppers. When the onion is clear, add kale, tofu and salsa and simmer on low. When the rice is cooked completely, add the beans and sauteed mix. Chop up some cilatro and add to the mix. Stir it all together, squirt some lime in and add some avocado on top. Hope you enjoy!
