My mom was in town for the past few weeks and the other day she made such a good beef barley soup that I thought I'd share with you all. Vegetarians can leave out the beef- this would still be a delicious, hearty soup even without it. Hope you enjoy!
Ingredients:
Beef
1 cup barley
summer squash
sweet red pepper
onion
garlic
fire roasted tomatoes
2 tbsp better than boullion
6 cups water
organic canola oil
Directions: Put a bit of canola oil in the pot and brown the beef with sauteed onions and garlic. Remove the beef and set aside. Stir the Better than Boullion into 1 cup of water and add to the onions and garlic. Add fire roasted tomatoes and the rest of the water. Add beef and barley and simmer for one hour on low heat. Add the squash and red pepper (you could add kale or mustard greens at this point too). Continue simmering for 30 minutes, add salt and pepper to taste. Eat and enjoy!
