Months ago, I found these cool colored ramekins on sale and I bust them out at every chance I get. They're perfect for desserts like mini crustless pumpkin pies, or breakfast with these bacon and egg breakfast cups. This dish would be perfect if you're hosting a brunch - because there's very little work to be done besides sautéing the onions and assembling the cups, you can just pop 'em in the oven and you're free to sip mimosas with your guests.
Ingredients for Bacon and Eggs Breakfast Cups
Each cup contained:
1 egg
1 piece of bacon
1T ghee (how to make your own ghee or here's where to buy ghee)
1/2T sautéed onion and garlic.
pinch of sea salt
pinch of white pepper
pinch of cumin
avocado (optional, for garnish)
Directions for Bacon and Eggs Breakfast Cups
Preheat the oven to 325. In a hot pan, put some ghee and sauté the onion and garlic. When the onions are clear, remove the pan from heat and set aside. Place bacon in the ramekin, flattening it against the edge. Crack 1 egg into the center. Add the seasoning and garlic and onion on top. Put the ramekin in the oven and bake for 45 minutes. Garnish with avocado.
